- Delicately wash your potatoes. This recipe uses either Yukon Gold potatoes or Baby Dutch Yellow potatoes. I usually leave the skin on, but you can definitely peel the skin depending on preference. I like the skin on because itβs one less thing to do! However, either way you should wash your potatoes to get rid of the dirt and any other foreign particles on your potato. As the skin is a little more fragile for these type of potatoes, you can have these potatoes soak in water for a little bit (5 minutes at the most), which makes it easier to rub the dirt off.
