Ingredients

  • 1 pound chicken wings
  • cup soy sauce
  • cup water plus 1 Tbsp for the glaze
  • 1 tablespoon lemon juice
  • 2 tablespoons honey
  • 3 teaspoons minced fresh ginger
  • ½ teaspoon ground cumin plus more for seasoning
  • ½ teaspoon red pepper flakes plus more for seasoning
  • ¼ cup chopped cilantro
  • pepper for taste
  • olive oil

Instructions

  • Coat a large sauté pan with olive oil over medium heat. Wash your chicken wings and pat dry with a paper towel. Add the chicken wings to the pan and brown each side for about 3 minutes each. Season each side of the chicken wings with cumin, red pepper flakes, and pepper to preference. (The 1/2 teaspoon of cumin and 1/2 teaspoon of red pepper flakes is used later for the glaze).
  • Add the soy sauce and 1/8 cup of water to the pan. Reduce the heat to medium-low, and cover the pan. Cook for about 12 minutes and rotate the chicken wings halfway through. See note below.
  • While the chicken is cooking, assemble the glaze. Mix together the 1 Tablespoon of water, honey, lemon juice, minced ginger, 1/2 teaspoon of cumin, and 1/2 teaspoon of red pepper flakes in a small bowl.
  • Pour the glaze on the chicken wings and increase to medium heat. Bring the glaze to a boil and cook for about 4 minutes until the glaze becomes thick and glossy. Reduce the heat to low and add the chopped cilantro. Serve and enjoy!

Notes

  1. Watch the chicken closely so that it doesn’t overcook. Browning the chicken will only take about 3 minutes on each side. When the soy sauce and water is mixed in the pan, the pan is covered so that the steam will help cook the chicken wings with the liquids. All in all, this process only takes about 12 minutes as you can tell it’s done when the wings have absorbed the darker color of the soy sauce.
