Fill the bottom of the BROILER PAN with water and sprinkle dried rosemary leaves on top of water. Preheat oven to 400° F and put the bottom of the broiler pan with the water in the oven as it preheats. In a small bowl, mix together the soy sauce, 1 teaspoon of dried rosemary leaves, half of the lemon juice, and pepper to taste.
Score the salmon (cut about 4 slits into the salmon). Put the salmon in the bowl with the seasoning and baste the salmon while the oven is preheating. After every couple minutes, spoon the soy sauce mixture over the salmon until the oven is done preheating.
Spray the top part of the BROILER PAN with non-stick spray. Put the salmon, skin side down, on the top part of the broiler pan and bake for 20 minutes. (At the 10-minute mark, the salmon will be pulled out for the mayo mixture). While the salmon is baking, mix together the mayonnaise and the other half of the lemon juice. After the salmon has baked for 10 minutes, pull the salmon out of the oven and spread the mayonnaise mixture on top. Put the salmon back in the oven and bake for the remaining 10 minutes. Enjoy!
