Fill the bottom of the BROILER PAN with water. Preheat oven to 400° F and put the bottom of the broiler pan with the water in the oven as it preheats. In a small bowl, mix together the chili sesame oil, brown sugar, soy sauce, lemon juice, minced garlic, and pepper to taste.
Score the salmon (cut about 4 slits into the salmon lengthwise and horizontal). Put the salmon in the bowl with the sauce and baste the salmon while the oven is preheating. After every couple minutes, spoon the brown sugar mixture over the salmon until the oven is done preheating.
Place aluminum foil on the top part of the BROILER PAN. Put the salmon, skin side down, on top of the aluminum foil. Pour the brown sugar mixture on top of the salmon, and fold the aluminum foil over the salmon to tent it. Bake the salmon for 20 minutes. At the 10-minute mark, baste the salmon with the brown sugar mixture from the aluminum foil (try to spoon the mixture all over the salmon). Put the salmon back in the oven with the aluminum foil unfolded so the top of the salmon is exposed. Bake for the remaining 10 minutes. Garnish with chopped cilantro. Enjoy!
