Add olive oil in a large sauté pan over medium heat. Once the olive oil is heated, add the garlic and onion to the pan and cook for 2-4 minutes until the onion is translucent.
Add the habanero to the pan and brown for another 2 minutes.
Add the sardines, lemon juice, soy sauce, and water. Stir to combine. Add the vinegar and pepper to taste. Cover the pan and simmer over low heat for 10 minutes. Enjoy!
