Ingredients

Filipino Chicken Adobo

  • 1.5 pounds chicken breast diced
  • 1 cup vinegar
  • ½ cup soy sauce
  • ½ cup water
  • 7 bay leaves
  • 1 onion sliced in rings
  • 6 garlic cloves minced
  • teaspoons pepper plus more for seasoning
  • salt to taste
  • olive oil

Toppings

  • 2 hard-boiled eggs sliced lengthwise

Instructions

  • In a large sauté pan, drizzle olive oil and heat. Cook the diced chicken over medium heat until the outside is not raw for 5-7 minutes. Season with salt and pepper to taste.
  • Add the sliced onion and minced garlic. Stir to combine.
  • Add the vinegar, soy sauce, water, bay leaves, and 1½ teaspoons of pepper. Cover the pan and lower to medium-low heat. Simmer for 15-20 minutes. Optional: If serving with hard-boiled eggs, put the sliced hard-boiled eggs in the sauté pan during the last 5 minutes to simmer with the sauce. Remove the bay leaves when serving. Enjoy!

Notes

  1. As discussed in Sam’s Pro Tips for this Simple Chicken Adobo Recipe, the outside of the chicken only needs to be cooked as the chicken will continue to cook with the sauce. Don't overcook the chicken! I cooked mine for 5 minutes in the pan before adding the onion and garlic.
  2. Make sure to taste the sauce before serving. Vinegar and soy sauce are really strong flavors, and not all are made the same. If the sauce is too tart for you, add more water to dilute the acidity of the vinegar and soy sauce.
