5-Step Best Beef Salpicao Recipe

Ingredients

  • 2 pounds ribeye steak or beef tenderloin cubed
  • ¼ cup Worcestershire sauce
  • 2 tablespoons soy sauce
  • tablespoons oyster sauce
  • 2 tablespoons unsalted butter diced
  • ½ teaspoon red chili flakes
  • 1 garlic head peeled and minced
  • salt and pepper to taste
  • olive oil

Garnish

  • chopped green onion optional

Instructions

  • Have the steak rest on the counter for 20-30 minutes to bring to room temperature and pat dry. Massage with salt and pepper. See note below.
  • In a LARGE, wide-based pan add olive oil and minced garlic over medium heat. Continue to stir the garlic for 3 minutes or until browned. Remove the garlic bits from the pan and set aside.
  • Increase the heat to high and add the steak to the pan. Make sure there is enough room in the pan, or it will steam. Sear each side of the steak for 2-3 minutes on each side.
  • Mix together the Worcestershire sauce, soy sauce, oyster sauce, and red chili flakes while the steak is searing. Add the sauce mixture to the steak and lower to medium-high heat. Stir regularly for 4-5 minutes until desired liquid level is achieved.
  • Finish the steak with the diced butter and stir to coat. Garnish with the fried garlic bits and chopped green onions. Enjoy!

Notes

  1. To get the most juicy, tender bite of steak, NEVER cook it cold! Steak should be pulled from the refrigerator to rest for at least 20-30 minutes prior to cooking.
  2. Be sure to use a wide enough pan to sear the steak. The steak needs room to cook and to brown evenly. If it overcrowds in the pan, this dish will start to steam and retain liquid when browning. 
  3. Cook the steak JUST ENOUGH so that it doesn’t toughen and dry out. You want to aim for at least medium-cooked steak.
