Servings: 6 pork chops

Ingredients

  • 6 boneless pork chops
  • 1 onion sliced in rings
  • 5 garlic cloves minced
  • 1 habanero minced
  • 2 teaspoons garlic herb seasoning
  • 2 teaspoons lemon pepper seasoning
  • 2 teaspoons Spicy Montreal steak seasoning
  • ¼ cup water
  • olive oil
  • 1 tablespoon unsalted butter optional
  • honey optional

Instructions

  • Mix the garlic herb seasoning, lemon pepper seasoning, and Spicy Montreal steak seasoning in a small bowl. Pat dry the pork chops with a paper towel and generously rub the seasoning on both sides of the pork.
  • In a cast iron or stainless steel skillet, heat the olive oil and butter (if using) over medium heat. Brown each side of the pork for 3-4 minutes.
  • Add ¼ cup of water or less to the pan, reduce to medium-low heat and cover the pan. See note below. Cook for 7-10 minutes or until the inside of the pork is cooked. Uncover the pan and flip the pork. Cook for another 2 minutes until the liquid is mostly gone.
  • Remove the pork from the pan and set aside. Add olive oil to the pan and heat. Once the oil is heated, add the onion, garlic, and habanero to the pan. Saute in the pan, then cover and cook for another 3 minutes.
  • Add the pork on top of the onion mixture. Spoon the mixture on top of the pork for 2 minutes until the pork is warmed. Optional: Garnish with honey for sweetness. Enjoy!

Notes

  1. When cooking your pork in the oil and butter, you want to cook JUST until browned on both sides over medium heat. It will continue cooking when you cover the pan. You DON’T want to cook until fully browned on both sides as the pork will be overcooked and hardened.
  2. Depending on the size of the pan used, you can add less than 1/4 cup of water as you don't need too much liquid. You only need enough for the pork to steam in the pan. However, 1/4 cup is the maximum amount.
  3. You can either use bone-in or boneless pork chops. Usually with bone-in, you can help your chances of making juicy, moist pork chops. I used the Trader Joe’s Boneless, Center-Cut Pork Loin Chops, where the pork was nice and thick with optimal fat.
