Fluffy Bread-Machine Ube Bread Rolls with a Sugared Cream Cheese Frosting | No Kneading and Easy

Super easy and fluffy ube bread rolls done in the bread machine to save you time! No kneading required to make these soft, swirled ube bread that comes out perfectly each time! Tropical and sweet, with the most amazing cream cheese frosting to top these rolls off!

Ingredients

Dough

  • 1 cup warm milk
  • 2 eggs room temperature
  • cup unsalted butter melted and cooled
  • cups all-purpose flour
  • ½ cup sugar
  • ½ teaspoon salt
  • teaspoons bread machine yeast

Ube Filling

  • ½ cup unsalted butter softened
  • cup brown sugar
  • 12 ounces ube halaya
  • ¼ teaspoon salt
  • ¼ teaspoon ube extract optional

Cream Cheese Frosting

  • 5 ounces cream cheese softened
  • cup unsalted butter softened
  • cups powdered sugar sifted
  • tablespoons heavy cream
  • 1 teaspoon vanilla
  • salt to taste

Instructions

Dough

  • Add the ingredients to the bread machine in the order listed above from liquids to dry. Make a little hole into the dry ingredients making sure not to have the liquid layer in the bottom peek through, and add the bread machine yeast into the hole.
  • Select the Dough cycle and press Start. Please be sure to add the ingredients in order recommended by your bread machine. Most commonly, you add in order of Liquids, Dry, followed by the Bread Machine Yeast.
  • Once the cycle is completed, turn the dough out on a floured surface and let it rest covered for 10 minutes. Prepare the ube filling during this time.
  • Roll the dough into a 16x21 inch rectangle. Spread the ube filling on top of the dough evenly. Using a strand of floss, cut the log into 12 slices. See note below.
  • Place the rolls into a greased 9x13 inch baking pan. Cover with a kitchen towel and let rest for 1 hour until the rolls double in size.
  • Preheat the oven to 375°F. Bake on the middle shelf for 23-25 minutes until the tops of the rolls are slightly golden brown. Assemble the frosting while the rolls are baking.
  • Spread the cream cheese frosting on the rolls while still warm. Enjoy!

Ube Filling

  • Cream the softened unsalted butted on medium-high speed for two minutes. Use a spatula to scrape the edges and mix again.
  • Add the brown sugar and salt and mix for one minute ensuring the brown sugar is well incorporated to avoid grittiness.
  • Add the ube halaya and mix well on medium speed. Optional-Add the ube extract and mix until the desired color is achieved.

Cream Cheese Frosting

  • In a mixer, whisk the softened unsalted butter and cream cheese for 5 minutes on high speed until fluffy and light in color.
  • Add the sifted powdered sugar gradually to the butter and continue whisking. Whisk until the powdered sugar is fully incorporated.
  • Add the heavy cream, vanilla, and salt. Whisk for another 3 minutes until fluffy and creamy. 

Notes

  1. I microwaved the milk for 45 seconds. You don't want the milk too hot when mixing!
  2. Floss: Using dental floss can cut the slices perfectly without marring the swirl. Take unflavored basic dental floss, put the floss underneath the roll, have each side of the floss string across, and pull sideways until the floss cuts the dough. (A sharp knife can also be used).   3. When adding the ingredients to your bread machine, remember it needs to be in order of LIQUIDS, DRY, YEAST! Super important! Check against what your bread machine recommends.
  4. Covering the dough with the kitchen towel will create a dark, enclosed environment for the dough to continue to rise and you’ll see the height of the ube bread rolls double in size. The size of the rolls will depend on your climate and consistency of the dough as it won’t rise too much in the oven afterwards!
  5. You can make these rolls a day before the event. After assembling the rolls and letting it rise, cover and refrigerate the rolls overnight. Bake as usual the next day.
