Ingredients

  • 2 pounds chicken thigh fillets
  • 4 red ruby potatoes peeled or unpeeled, diced
  • 1 cup tomato sauce
  • 2 tablespoons hoisin sauce
  • ¼ cup pineapple juice
  • ¼ cup lemon juice
  • 1 onion finely diced
  • 3 garlic cloves peeled and minced
  • 3 bay leaves
  • ½ cup water
  • salt and pepper to taste
  • olive oil
  • red chili flakes to taste optional
  • ½ cup piloncillo (unrefined brown sugar cane) optional
  • cup soy sauce optional

Instructions

  • In a large sauté pan, add olive oil over medium-high heat. Salt and pepper the chicken thighs and brown each side until just golden brown. Once browned, remove the chicken from the pan.
  • Add the diced garlic and onion to the pan. Sauté with the leftover oil and chicken juice until softened. Add the tomato sauce, hoisin sauce, pineapple juice, lemon juice, water, and bay leaves. Optional but recommended- Add the piloncillo, soy sauce, and red chili flakes to taste. Stir until the piloncillo is melted.
  • Add the chicken back into the pan and include the diced potatoes. Cover and simmer over medium-low for 15 minutes. Simmer for another 5 minutes uncovered until the liquid is reduced and the potatoes are softened. Season with additional salt and pepper to preference. Enjoy!

Notes

  1. Brown the chicken thighs over medium-high heat until the outside is JUST golden brown. Once all the spices and sauces are added to this asian bbq chicken recipe, the chicken will continue to simmer in the sauce until that tender consistency is achieved.
  2. Adding the piloncillo, soy sauce, and red chili flakes is optional but totally recommended! These ingredients deepen the flavor of the sauce, for a sweet and sour mix.
  3. If the sauce is too thick after simmering with the diced potato, add water as needed.
