In a large skillet, add olive oil over medium heat. Add the sliced potatoes and sauté for 10 minutes until softened. Stir every couple minutes. Season with salt and pepper to preference.
Add the rest of the ingredients to the pan except for the cheese. Stir to combine. Sauté for 5 minutes until slightly softened.
Add ½ a cup of the shredded mozzarella cheese to the potatoes and combine. Season with additional salt and pepper if needed.
Once combined, sprinkle the remaining mozzarella cheese on top of the potatoes. Cover the skillet and turn off the heat. Leave the skillet covered for 5 minutes until the cheese is melted. Serve immediately. Enjoy!
