20-Minute Skillet Mozzarella Cheese Potatoes with Peppers

Easy, 20-minute mozzarella cheese potatoes done stovetop with no hassle! Combined with bell peppers and onion, this dish is the perfect side to any cozy, comfort dish! No oven needed to cook these delicious, spiced potatoes!

Ingredients

  • 7 red ruby potatoes (unpeeled) sliced in wedges
  • 1 cup shredded mozzarella cheese
  • 1 red bell pepper sliced in strips
  • 1 jalapeno diced
  • ½ onion finely diced
  • 2 garlic cloves peeled and minced
  • salt and pepper to taste
  • olive oil

Instructions

  • In a large skillet, add olive oil over medium heat. Add the sliced potatoes and sauté for 10 minutes until softened. Stir every couple minutes. Season with salt and pepper to preference.
  • Add the rest of the ingredients to the pan except for the cheese. Stir to combine. Sauté for 5 minutes until slightly softened.
  • Add ½ a cup of the shredded mozzarella cheese to the potatoes and combine. Season with additional salt and pepper if needed.
  • Once combined, sprinkle the remaining mozzarella cheese on top of the potatoes. Cover the skillet and turn off the heat. Leave the skillet covered for 5 minutes until the cheese is melted. Serve immediately. Enjoy!

Notes

  1. For the triangular wedged cut look, cut the potato in half, and then cut the halved potato in half again. No need to peel the skin!
  2. During the last 5 minutes of this recipe, the steam will melt the cheese and continue to soften the potatoes and peppers. I like to think of this time as the marinating period, where all the flavors stew together! Serve immediately as this dish tastes the best while the cheese is still warm and not hardened on the potatoes.
