Super Seed Peanut Butter Brownie Bites That is Way Too Addicting

Ingredients

  • ½ cup unsalted butter melted
  • 1 tablespoon coconut oil
  • ½ cup sugar
  • ½ cup brown sugar
  • 2 eggs room temperature
  • ½ tablespoon vanilla
  • ½ cup all-purpose flour
  • ½ cup unsweetened cocoa powder (½+⅛ cup)
  • a pinch of salt
  • ½ cup Trader Joe’s 72% dark chocolate chips
  • nonstick spray

Toppings

  • creamy peanut butter
  • chia seed
  • hemp seed
  • unsweetened coconut flakes
  • honey optional
  • sea salt optional

Instructions

  • Preheat oven to 350°F. Spray the mini brownie bites pan with nonstick spray.
  • Whisk the melted butter, white and brown sugar, and coconut oil until creamy in a medium-sized bowl. Beat the eggs separately and gradually add to the mixture until lightened in color. Add the vanilla and combine.
  • In another bowl, combine the flour, unsweetened cocoa powder, and salt. Fold the dry ingredients into the wet mixture until just combined. Do not overmix! Fold in a ¼ cup of the Trader Joe’s 72% dark chocolate chips.
  • Pour the batter into the mini brownie bites pan until the top is reached. Top with the remaining Trader Joe’s 72% dark chocolate chips. Bake for 10-13 minutes. Test with a toothpick as it should pull out slightly dirty.
  • Have the brownies cool in the mini brownie bites pan for 5-7 minutes before transferring to a wire rack.

Toppings

  • Put the peanut butter brownie bites on a rimmed baking pan. Spread about a teaspoon of creamy peanut butter on top of the brownies. Top with the chia seed, hemp seed, and coconut flakes. Drizzle honey, additional peanut butter, and sea salt if desired. Enjoy! Using a rimmed baking pan to top these brownies prevent a mess in the kitchen!

Notes

  1. When the dry ingredients (flour, cocoa powder, and salt) are sifted into the wet ingredients, stir delicately until just combined. Like seriously fold the flour into the wet mixture only a couple times, until you no longer see the flour. If you overmix, these amazing peanut butter brownie bites will bake dry and be hard.
