In a large sauté pan or electric skillet, brown the Spam for 7-9 minutes over medium heat. Remove from pan and set aside in a large bowl. Scramble the eggs in the same sauté pan. Once cooked, remove from pan and put in the large bowl with the Spam.
Add some olive oil to the sauté pan and add in the chopped garlic. Cook the garlic in the olive oil until slightly browned.
Toss the cooked rice in the sauté pan with the garlic over medium low heat. Stir to combine.
Add the chili sesame oil, oyster sauce, and pepper to the rice. Mix until the rice is evenly coated with the seasoning. The rice will turn to a light brown color once evenly mixed. Season with additional chili sesame oil if needed and mix well.
Toss the green onion with the rice and mix well. Cover the pan over low heat for 5 minutes. Prepare the vinegar sauce during this time.
In a sauce cup, mix the vinegar, minced garlic, pepper to taste, and hot sauce to taste. Serve on the side of the spam garlic fried rice. Enjoy!
