In a large soup pot over medium heat, add the pork belly, onion, tomato, garlic, and water. Cover and cook for 15-20 minutes until the pork belly starts to become tender.
Add the Knorr Tamarind Soup Mix Packet and mix. Toss in the broccoli, string beans, okra, and habanero (if using). Cover over medium heat for 15 minutes.
Add the spinach, juice from ½ a lemon, fish sauce, and salt and pepper to taste. Cook for another two minutes until the spinach has cooked. Add additional water if necessary to reach desired consistency. Enjoy!
