In a non-stick pan over medium-low heat, add olive oil. Once heated, add the cauliflower rice. Mix the cauliflower with the oil until evenly coated. Cook for 5-6 minutes. After 3 minutes in the 5–6-minute mark, add the garlic.
Add the cumin, salt and pepper to taste. Stir to combine.
Remove the pan from the heat and toss with the lime zest, lime juice, and chopped cilantro. Enjoy!
