7-Minute Cilantro Cauliflower Lime Rice

Who knew cilantro cauliflower lime rice can be so good and healthy? In only 7-minutes, this side dish is the perfect companion to your main meal that actually makes you want to eat your vegetables!

Ingredients

  • 10 ounces frozen or fresh cauliflower rice see note below
  • ½ cup cilantro chopped
  • 2 garlic cloves minced or pressed
  • ½ teaspoon cumin
  • zest of one lime
  • juice from ½ a lime
  • salt and pepper to taste
  • olive oil

Instructions

  • In a non-stick pan over medium-low heat, add olive oil. Once heated, add the cauliflower rice. Mix the cauliflower with the oil until evenly coated. Cook for 5-6 minutes. After 3 minutes in the 5–6-minute mark, add the garlic.
  • Add the cumin, salt and pepper to taste. Stir to combine.
  • Remove the pan from the heat and toss with the lime zest, lime juice, and chopped cilantro. Enjoy!

Notes

  1. For a quicker option, I use frozen cauliflower rice and jazz it up! This saves a lot of prep work and allows me to make this recipe in 7 minutes easily. Once all the seasonings, lime juice, and cilantro is added, this cauliflower lime rice is delish!
  2. If you would like to use fresh cauliflower, you’ll want to cut the florets off the stalk. The QUICKEST way to prep the florets is to use the grater blade in your food processor.
