In a large frying pan, fill the pan halfway with oil and heat. Once the oil is hot, put a ½ cup of brown sugar in the oil. Make sure the oil comes up to at least half the height of the bananas depending on what size pan is used.
Peel the bananas and set aside. Once the sugar looks melted in the pan and is floating, place the peeled bananas in the frying pan.
Fry each side of the bananas for 2-3 minutes. As the bananas fry, consistently spoon the oil and sugar over the banana until golden brown.
Flip the bananas to the other side and add the remaining ½ cup of brown sugar to the pan. Continue to spoon the oil and sugar over the bananas until browned. Don't fry more than 5-6 minutes in total.
Transfer the fried bananas to a wire rack to cool. Carefully put the bamboo skewer through the banana until the halfway point. Serve warm. Don't leave the bananas on the wire rack for too long as it may start to stick and become difficult to skewer.
