Ingredients

  • 2 English cucumbers sliced in ½ inch circles
  • 2 garlic cloves peeled and minced
  • 1 teaspoon ground ginger
  • 2 teaspoons sesame seeds
  • cup cilantro chopped
  • 2 tablespoons rice vinegar
  • ½ tablespoon soy sauce
  • 2 teaspoons Sriracha
  • 1 tablespoon chili sesame oil
  • ½ tablespoon honey
  • lemon juice to preference
  • salt and pepper to taste
  • red chili flakes to preference optional

Instructions

  • Wash the cucumber and slice in ½ inch circles. Place the cucumber slices in a small bowl and mix with salt to taste. Set aside for 10 minutes and prep the other ingredients.
  • In another medium size bowl, combine all the remaining ingredients well. Season with pepper to taste.
  • Drain the salt water from the cucumber slices. Note: If the cucumber slices are too salty, rinse with water. Toss the cucumber slices with the prepared sauce. Serve immediately.

Notes

  1. In this Asian cucumber salad recipe, use a firm cucumber with a thinner skin. I used English cucumbers in this recipe which worked nicely.
