In a large sauté pan, add olive oil over medium heat. Once heated, add the diced chicken to the pan. Cook only until the outside is not pink for 3-4 minutes. Season with salt and pepper to taste.
Add everything else to the pan except the chopped cilantro. Cover the pan and simmer over medium heat for 15 minutes.
Remove the cover and toss with the chopped cilantro. Season with salt and pepper if needed. Enjoy!
