Asian Pepitas Salad with Spicy Poke | No Measuring Needed

With Fall on the way, this Asian-inspired pepitas salad is full of spicy flavor with oh so soft poke and jalapeno chips! No measuring needed for this filling salad topped with a toasted sesame dressing! Easy, nutritious, and should be on your list of salad goals!

Ingredients

  • baby spring mix 2 hefty handfuls
  • pepitas
  • spicy tuna poke 2 large scoops
  • ½ avocado sliced
  • edamame shelled
  • jalapeno chips
  • roasted black sesame seeds
  • cilantro
  • toasted sesame dressing
  • freshly ground pepper to taste optional

Instructions

  • In a large salad bowl, place two hefty handfuls of baby spring mix. Top with all the ingredients except for the toasted sesame dressingOptional- Add freshly ground pepper to taste.
  • Drizzle the toasted sesame dressing on top of the salad. Serve immediately. Enjoy!

Notes

  1. This Asian-inspired pepitas salad is way too easy, and you absolutely do not need to measure! A good rule of thumb for a nice, even mix of greenery is to grab two hefty handfuls of spring mix for your salad bowl! Another tip on making this dish under 10 minutes is to not chop the cilantro! The cilantro leaves will blend perfectly with the baby spring mix.
  2. For the BEST flavor of dressing, we love using the Trader Joe’s Organic Toasted Sesame Dressing in our pepitas salad.
  3. Another time saving tip is to buy the spicy tuna poke already pre-made. I like to buy at least half a pound of spicy tuna poke to top my salad. This will usually be enough for two LOADED salad bowls while still staying fresh with a beautiful color.
