Ingredients

  • ½ cup long-grain rice uncooked
  • cups water
  • teaspoons ground cinnamon
  • ½ cup sugar
  • 2 cups milk
  • pinch of salt

Toppings (optional)

  • brown sugar
  • crushed nuts
  • cinnamon
  • raisins

Instructions

  • Wash the rice in a medium saucepan and add the water over medium-heat. Bring the rice to a boil until the liquid is reduced. Once the rice starts floating to the surface, reduce the heat to low and cover for 5 minutes. Remove from heat and keep the rice covered for another 3-4 minutes.
  • Add the sugar, cinnamon, and salt to the rice. Stir to combine.
  • Add the milk and bring the mixture to a boil over medium-low heat. Stir constantly. Once the rice starts boiling and the milk is reduced, simmer on low covered for 5 minutes until thickened. Continue to stir occasionally.
  • Turn the heat off and let the rice rest for 10 minutes. During this time, the rice porridge will thicken. Serve immediately. Enjoy!

Notes

  1. When simmering the rice porridge with the milk, watch it carefully. You still want some liquid as it will continue to firm when you leave the rice alone.
  2. I recommend using 2% milk or whole milk for a creamy consistency.
  3. When storing the arroz con leche in the refrigerator, the rice will absorb most of the milk. If reheating, add a splash of milk to get the right consistency. This rice pudding can also be served cold.
