Mix the garlic herb seasoning, lemon pepper seasoning, and Spicy Montreal steak seasoning in a small bowl. Pat dry the pork chops with a paper towel and generously rub the seasoning on both sides of the pork.
In a cast iron or stainless steel skillet, heat the olive oil and butter (if using) over medium heat. Brown each side of the pork for 3-4 minutes.
Add ¼ cup of water or less to the pan, reduce to medium-low heat and cover the pan. See note below. Cook for 7-10 minutes or until the inside of the pork is cooked. Uncover the pan and flip the pork. Cook for another 2 minutes until the liquid is mostly gone.
Remove the pork from the pan and set aside. Add olive oil to the pan and heat. Once the oil is heated, add the onion, garlic, and habanero to the pan. Saute in the pan, then cover and cook for another 3 minutes.
Add the pork on top of the onion mixture. Spoon the mixture on top of the pork for 2 minutes until the pork is warmed. Optional: Garnish with honey for sweetness. Enjoy!
