Garlic Filipino Meatloaf Without Breadcrumbs

This delicious filipino meatloaf recipe is loaded with garlic and baked in the oven for an easier alternative to traditional steaming! No breadcrumbs needed for this ultra-moist Filipino style recipe using spicy banana ketchup for extra flavor!

Ingredients

  • 1.5 pounds lean ground beef
  • 10 garlic cloves peeled and minced
  • ½ red bell pepper diced
  • 1 onion finely diced
  • 1 carrot peeled and diced
  • ½ cup banana ketchup
  • 3 eggs
  • salt and pepper to taste

Instructions

  • Preheat oven to 350°F.
  • In a large bowl, combine the ground beef, diced onion, garlic, bell pepper, carrot, salt and pepper to taste.
  • Add the banana ketchup to the mixture and mix well.
  • In a smaller bowl, whisk together the eggs before adding to the ground beef mixture. Combine well. Season with additional salt and pepper to taste.
  • Transfer the ground beef mixture to the meatloaf pan. Press firmly into the pan. Bake for 45 minutes covered with aluminum foil. Remove the aluminum foil and bake for an additional 30 minutes uncovered.
  • For any extra grease on top of the meatloaf, use a paper towel to dab the grease. Serve with extra banana ketchup on the side. Enjoy!

Notes

  1. I used 96% lean ground beef in this recipe.
  2. We love using the meatloaf pan for our filipino meatloaf as all grease is removed and the tray removes from the baking pan so that your meatloaf is set aside without flipping. This makes cleanup super simple as you’ll see the remaining grease at the bottom of the pan for easy cleanup!
  3. This meatloaf recipe is extremely moist due to the eggs and banana ketchup. No breadcrumbs needed!
