Ingredients

  • 1 cup creamy peanut butter
  • 1 cup old fashioned oats
  • cup honey
  • ¼ cup Trader Joe's unsweetened cacao chips see note below
  • 2 teaspoons flax seed
  • 2 teaspoons chia seed
  • 2 teaspoons hemp seed
  • ¼ cup unsweetened coconut flakes

Instructions

  • Combine all ingredients in a mixer on low speed using the paddle attachment.
  • Once combined, chill in the refrigerator for 30 minutes.
  • Roll mixture into 1-inch balls. If the mixture is too dry, add more honey until the mixture can be easily shaped into a ball. Store energy balls in the refrigerator. Enjoy!

Notes

  1. When forming these peanut butter energy balls into that ball shape, you want a dry, slightly sticky mixture. If these balls are too dry, it will just crumble when shaping into a ball. If this happens, add honey or maple syrup until the ball is easier to shape.
  2. We used the Organic Completely Cacao Chips from Trader Joe's. These chips are unsweetened chocolate that have a slight bitter taste. You don't need to use this brand, but be sure to use a form of unsweetened chocolate to keep these balls on the healthier side.
