Preheat oven to 350°F.
In a large bowl, combine the ground beef, diced onion, garlic, bell pepper, carrot, salt and pepper to taste.
Add the banana ketchup to the mixture and mix well.
In a smaller bowl, whisk together the eggs before adding to the ground beef mixture. Combine well. Season with additional salt and pepper to taste.
Transfer the ground beef mixture to the meatloaf pan. Press firmly into the pan. Bake for 45 minutes covered with aluminum foil. Remove the aluminum foil and bake for an additional 30 minutes uncovered. For any extra grease on top of the meatloaf, use a paper towel to dab the grease. Serve with extra banana ketchup on the side. Enjoy!
