Have the steak rest on the counter for 20-30 minutes to bring to room temperature and pat dry. In a LARGE, wide-based pan add olive oil over medium-high heat. Add the steak to the pan. Sear each side of the steak for 3-5 minutes on each side. Season with salt and pepper to preference.
Once the steak is browned, add a ¼ cup of water to the pan. Cover and lower to medium heat. Simmer for 7-10 minutes.
Remove the cover and add the diced potato. Sauté for 2-3 minutes before adding the tomato and sliced bell peppers. Season to preference with the different seasonings. Sauté for 3-5 minutes stirring occasionally.
Cover and simmer for 5-7 minutes until the potatoes and peppers are softened. Optional but recommended- Cube the 2 tablespoons of the jalapeno honey butter and add the cubes to the center and outside of the pan with the heat off once the peppers are softened. Enjoy!
