Rainbow Mexican-Style Steak with Bell Peppers

This colorful steak with bell peppers is juicy, succulent, and full of that zesty flavor! The perfect filling for tacos, pita pockets, or even just by itself! Using three different kinds of bell peppers and diced potato, this dish looks way too good on the plate!

Ingredients

  • 2 pounds top sirloin steak diced in large cubes
  • 1 orange bell pepper sliced in strips
  • 1 green bell pepper sliced in strips
  • 2 red bell peppers sliced in strips
  • 1 large tomato diced
  • 4 red ruby potatoes diced
  • ¼ cup water
  • olive oil

Seasoning to taste (Optional)

  • onion powder
  • garlic powder
  • chili powder
  • ground cumin
  • paprika
  • salt and pepper
  • 2 tablespoons jalapeno honey butter recommended

Instructions

  • Have the steak rest on the counter for 20-30 minutes to bring to room temperature and pat dry. In a LARGE, wide-based pan add olive oil over medium-high heat. Add the steak to the pan. Sear each side of the steak for 3-5 minutes on each side. Season with salt and pepper to preference.
  • Once the steak is browned, add a ¼ cup of water to the pan. Cover and lower to medium heat. Simmer for 7-10 minutes.
  • Remove the cover and add the diced potato. Sauté for 2-3 minutes before adding the tomato and sliced bell peppers. Season to preference with the different seasonings. Sauté for 3-5 minutes stirring occasionally.
  • Cover and simmer for 5-7 minutes until the potatoes and peppers are softened. Optional but recommended- Cube the 2 tablespoons of the jalapeno honey butter and add the cubes to the center and outside of the pan with the heat off once the peppers are softened. Enjoy!

Notes

  1. Be sure to use a wide enough pan to sear the steak! The steak needs room to cook and to brown evenly. If it overcrowds in the pan, it will start to steam and retain liquid when browning.
  2. If you want to use this steak with bell peppers recipe as the filling for a taco or pita pocket, dice the steak to smaller cubes. If this is a main dish, larger chunks are fine.
  3. Serving size is based on using this as a main dish. The serving size can be increased if using as a filling instead.
  4. No measurements are provided for the different seasonings as you can season to preference. Using only salt and pepper is perfectly fine too!
  5. Optional but RECOMMENDED - To take this steak with bell peppers and onions to a whole other level, add 2 tablespoons of our jalapeno butter from our 2-Step Jalapeno Honey Butter with Lime!
